Preferences contain settings related to language, interface, tools, processing quality etc. 

To call Preferences dialog: 

Option1. Press Ctrl+K (Win) /Cmd + K (Mac)
Option 2. Go Tools -> Preferences
Option 3. Click Preferences button on the toolbar
